Sugar cookies
Christmas sugar cookies.
Cookies:
3/4 tsp iodized salt
1 cup (2 sticks) cold unsalted butter, cubed
1 cup granulated sugar
2 eggs
2 tsp vanilla extract
3 1/2 cup all-purpose flour
1/2 cup cornstarch
1. Preheat oven to 325°F.
2. Cream butter and sugar until smooth.
3. Mix in eggs and vanilla until combined.
4. Add dry ingredients, mix on low speed for 3-5 mins.
5. Sheet the dough to 1/4 inch thick. Use a 3-inch round cookie cutter.
6. Bake for 9-11 mins. Cool completely, then flood with royal icing.
Royal icing:
4 cup powdered sugar
2 tbsp DF milk
1 tsp vanilla extract, liquid or gel food coloring
1. In a medium bowl, combine powdered sugar with milk and vanilla. Whisk until smooth and free of lumps.
2. Once you have base icing ready, divide it into bowls if using multiple colors. Add a few drops of food coloring and mix thoroughly to achieve the desired color.
