Mini peppermint cupcakes
Peppermint cupcakes and frosting.
Cupcakes:
1 1/2 cup GF All-purpose flour
1 cup sugar
1/2 cup vegetable oil
1/3 cup cocoa powder
1 tbsp white vinegar
1 tsp baking soda
1 tsp vanilla extract
1/2 tsp salt
1 tsp peppermint extract
1 cup water
1. Turn the oven on to 350°F and line the cupcake pan with liners.
2. In a large bowl, whisk together dry ingredients.
3. Add wet to dry ingredients and mix to combine. 40
4. Fill cupcake pan with 2 tbsp of mix.
5. Bake for 20 minutes or until a toothpick inserted comes out clean.
Frosting:
1/2 cup DF butter softened
3 cup powdered sugar
2 tbsp DF milk
1/2 tsp peppermint extract
optional crushed peppermint candies for garnish
1. Beat butter until smooth, then gradually add powdered sugar, milk, and peppermint until you reach a spreadable consistency. Frost cupcakes and sprinkle with peppermint candies, if desired.
